Brewed in the spirit of chrismas or holiday ales, this high ABV, amber colored beer is fermented with our house strain of wild yeast. The basic recipe is inspired by a trappist dubbel, which gives a nice rich caramel and dark fruit overtone, which is offset by the dry spice of our wild yeast. The wild yeast ferments the majority of the malt based sugars, and then gets kicked up another notch with a healthy dose of molasses during the height of fermentation. This produces an unfiltered ale with a nice crisp, herbal spice character and a rich flavor of plums and treacle. A perfect sipping beer for the colder months.
